I am not a fan of vegetables. I can easily go days without them and pretty much not miss them. Because of that, it is always a challenge to get enough into my daily diet.
The Good Housekeeping Cookbook from 1955 (see sidebar) has been a major source of inspiration. The latest is a little "tip" about serving a "First Course" of vegetable juice and/or veggie platter in the living room while meal preparations are being completed in the kitchen.
A light bulb went off for me.
A glass of veggie or tomato juice sitting on the counter for me to sip, or a plate of cut up veggies off to the side would be so easy to nibble on while I finish up that last parts of dinner. Genius.

I like vegetables, but I too go the longest time without eating any. How hard is it to open a can of V8 or tomato juice? :)
