Budget Fare--Tuesday Menu

I started out the day full of motivation. I got lots of work done. I exercised. I had my breakfast and my luncheon. Then something horrendous happened. A friend came by bearing a gift she knew that I liked. A McD's McFlurry. M&M, no less. I couldn't say no. Well, I could have, but I didn't. I ate the whole thing.

To compensate, I decided to skip supper to try to undo my indulgence. I ended up being hungry and had a baked potato and a piece of cheese. I looked up the McFlurry on line.

620 calories. Oh my. That's over half my day's total calorie count.

Oh my.

As a true Southern Belle, I will claim the declaration that: "Tomorrow is another day!" I will get back on the vintage wagon (taking care to wear nice gloves and a hat). I will guard myself against another disaster like that!

Breakfast: I have never had oatmeal like this before. For the first time in my life I LIKED oatmeal!! It just worked for me. I'm excited about that.

Luncheon: Excellent. I could do this again.

Dinner: Was SUPPOSED to be tomato soup with liver. The liver wasn't going to happen. I was planning on some leftover chicken that I still had. The store I went to for this week's groceries didn't have canned apricots, so I substituted canned peaches. The Cole slaw was the Savory Slaw recipe from THIS day. The Deviled Green Beans had promise. I may try to slip them in somewhere and try them since I already bought the horseradish. Here is the recipe for continuity's sake.

Deviled Green Beans

1 lb. green beans
1 med. onion, sliced
1 tsp. oil
1 tablespoon prepared mustard
1 tablespoon prepared horse-radish
Salt and pepper to taste

Prepare beans for cooking; cut French style. Cook in a small amount of boiling salted water until almost done; drain. In skillet, cook onion in oil or butter until golden, stirring to avoid scorching. Add beans to onion. Add remaining ingredients; heat through. Serve at once.

Holy cow! 620 calories in a McFlurry! Man, that stinks. Oh well, as you said, tomorrow is another day!!! I'm sure you will do great!

That green bean dish sounds all kinds of tasty! My mouth just watered all over my keyboard
