Week Six: Thursday, Friday, Saturday, and Sunday Menus

Thursday all of the menus were re-runs. My husband said the Clam Chowder was really flavorful. My only change to the recipe (Here) is using vegetable juice instead of tomato juice and being liberal with the cayenne.

Friday was good. The Oven Croquettes were so runny I ended up pouring them into the pan and then cutting them into eight portions. Very THIN portions. The flavor was good. The Broccoli with celery and onions was also "good." Nothing to write home (or in a blog!) about. I think I'll do them again as the onions and bouillon cube do dress up the taste of the broccoli. I'll try them on the stovetop next time. We had ice cream at the local cremee shop, so I opted out of the Spanish Cream. You WILL see it show up again, though, because I want to try it.

Oven Croquettes (8 servings)

2 cups ground beef
1 tsp. butter
1 tbsp. flour
Salt and Pepper to taste
1 tbsp. chopped parsley
1/2 cup beef bouillon (from cube) (I used chicken)
1/2 cup skim milk (I used whole)
2 tbsp. raw onion, chopped
2 tbsp. green pepper, chopped
1 egg
1 tsp. Worcestershire sauce
1 tbsp. chili sauce (I used cayenne)

Melt butter; add flour and seasonings; blend well. Add bouillon and skim milk; stir and cook until slightly thickened. Add ground meat, chopped vegetables, egg, Worcestershire sauce, and chili sauce. Blend well and heat through. Preheat oven to 375. Use a small mold to form mixture into 8 croquettes. Place them on a lightly greased oven platter or glass pie pan. Bake for about 25 minutes.

Broccoli with Celery and Onion (3 servings)

10 oz. pkg. thawed frozen broccoli
1 med. stalk diced celery
1 small onion, sliced thin
1/2 cup chicken bouillon (from cube)

Thaw frozen broccoli. Preheat oven to 350. Cut broccoli into small pieces; arrange in a 1 quart glass casserole with the diced celery and sliced onion. Pour the hot bouillon over vegetables. Cover; bake until vegetables are tender--not more than 30 minutes. Add salt if necessary.

Saturday was also all reruns. Again we indulged by getting a cremee.

Sunday being Mother's Day was a bust in the food department. That's what Monday's are for--starting over!
