Tuesday morning I was back on track with my exercise (mowing), water and a breakfast of oatmeal pancakes, 1 slice of bacon, and pineapple juice. (250 calories)
Lunch fell apart when I chose to grab a quick McDonalds meal and two M&M cookies my sister insisted I have. (Really, she twisted my arm and everything!) (1450 calories)
Supper returned to the proper balance of nutrition from 1955 with:
Broiled Onion-Cheese open faced sandwiches
Spinach (Steamed with salt and pepper)
Gingerbread cookies (Store bought refrigerated dough)
I chose to skip the cookies as I'm still in shock over the amount of calories in the M&M cookies. For supper my total calorie intake was 165.
Today I will NOT be consuming 1450 calories in one meal. I should have known that, and probably did know that it was a lot of calories, but seeing the number has produced a good result.
Wednesday will be better, oh yes indeedy!
Broiled Onion-Cheese Sandwiches (1 Serving = 2 slices)
3 medium onions, sliced thinly
1 tablespoon fat (I used bacon fat)
8 slices bread
4 ounces processed cheese (I used Jalapeno Cheddar)
Saute the sliced onion in the tablespoon of fat on medium low for about 20 minutes. Divide the onions to top 8 slices of bread. Slice 1 ounce of cheese for every 2 slices of bread and place on top of onions. Arrange on oven rack and toast for a few minutes at 350, just until cheese begins to melt and toast is crispy.
(My husband LOVED this meal. The onions were very sweet and the kick from the jalapenos was extra nice. The spinach was plain with salt and pepper. I did NOT like it. I choked it down, though. I prefer spinach as a helper in a dish, not the main attraction.)
